Enzymes are natural protein present in all living organisms. The use of oenological enzyme allow us to transform the aromatic precursors and liberate aromas, heighten the pressing performance and obtaining clearer grape juice, extract color from the peel and stabilize it, reduce leaking problems and breaking polysaccharide from long chains. They are a great tool provided by Nature, with various uses. There is an enzyme for each use.
